I've been experimenting all summer to get the best crunchy skin, juicy meat combo, and....<br /><br />I rub salt all over the bird, inside and out, then leave it to stand for a good few hours in air temperature, just letting it sit in a microwave to keep the flies off, which helps dry out the skin.<br /><br />Pre-heat the oven to full blast, rub a bit more salt and black pepper into the skin, then shove in the oven.<br /><br />After 15 mins at full blast turn down just a touch, and cook for another hour.<br /><br />Take out, let rest for 5 minutes, then go to work on the sweet salty goodness :-)<br />hair today gone tomorrowhttps://www.blogger.com/profile/17922460402719382414noreply@blogger.com
