What's for dinner - Feta and Spinach Pie




Again, thanks to my food hero Jamie Oliver and his 30 minute meals, we treated ourselves to an absolutely most delicious dinner pie. 
We rarely eat meat so whenever we cook we try to make our meals nutritious and rich. The original recipe said I needed filo pastry but who would care, I'm too lazy to run around the shops and honestly I hate it, so I chose regular french pastry. I don't know what filo tastes like but this version was amazing and I'm going to stick to it. This pie is delicious hot with a side salad but also tastes great cold, for breakfast or lunch. 

What you need

french or filo pastry
5 eggs
250gr feta cheese
2 tbs dry oregano
50gr grated cheese
250gr spinach

What to do

Mix all the ingredients in a bowl but leave some chunks of feta cheese, add in previously blanched spinach.
Stretch the pastry until very thin. Lay it onto a baking sheet and place in a frying pan (no plastic handle, you're going to put it in the oven later). Grease it with olive oil and sprinkle with chilli powder/cayenne. 

Pour the mixture into the pan and fold the sides of the pastry. Sprinkle with more olive oil, sweet pepper (or chilli) and rosemary. 

First, fry for approx. 2 mins until it's golden on the bottom, then put in the over for 20mins. 

Serve with any veggies you like. We used mixed salad with olive oil and white wine vinegar.
