Chocolate peanut butter cupcakes


For the first time in a very long time I managed to make perfect cupcakes with perfect frosting. Until now, it has always been one or the other, never both. Remember my perfect chocolate cake recipe? I used this recipe yesterday, only instead of pumpkin I used applesauce and a bit more buttermilk. It was perfect. 
Next time I’m going to skip cinnamon, it doesn’t really go with peanut butter.

Here is the upgraded recipe (everything should be in room temp):
150gr butter
1 cup sugar
1 2/3 up all purpose flour
2/3 cup cocoa powder
2 tsp baking powder
1 tsp baking soda
3 eggs
1 cup buttermilk
0,5cup applesauce

Sift all the dry ingredients in one bowl.
In another, mix butter and sugar until light and fluffy. Add the eggs, one by one. Combine with dry ingredients, buttermilk and applesauce. Mix a few seconds.
Bake for 25mins in 180C.



Frosting:
150gr cream cheese
100gr creamy peanut butter
3/4 cup powdered sugar

Mix all the ingredients until shiny and fluffy. Keep in the fridge until cupcakes cool down completely.
