What's for dinner - Vegetarian Stir Fry with Soba noodles


One of the many presents my parents gave us at christmas was a basket full of italian and asian spices and sauces. We are huge fans of these cuisines, asian in particular (we cooked some here and here). It’s really quick, healthy, full of rich flavours and so, so tasty. I saw this recipe on tv a while ago and promissed myself to make it. It’s stir fry so it literally took me about 10mins. Once you prepare all the ingredients, it’s just a matter of a few minutes. We are currently trying not to eat meat (honestly, I’ve been trying hard not to eat it at all) and this is a perfect example of a dish where it would be completely unnecessary. 











Start with frying all the above ingredients for a few seconds. Add carrots, peppers, mushrooms and spring onions in the end. Fry approx. 3-5mins and drizzle with some marinade (below)


Cook noodles according to the instructions. Drain and drizzle generously with the marinade. Set aside so the noodles can absorb all the flavours from the marinade.
