What's for dinner - Anda Curry

If you’re polish or you know polish, make sure you visit THIS blog. I wouldn’t mind being adopted by these peeps, seriously. In a nutshell, a polish guy leaves everything behind and buys a one way ticket to Thailand, cool ha? Not only does he go on the journey of his life, he also meets a girl and has little baby Hana, how sweet is that! I’m thrilled by all the places he goes to and the people he meets. And as you can see we also love the food he prepares in his very own kitchen in the new house on the Phuket island. Ok, it’s not healthy to be jealous but who cares, we want what they have :) 

So, here’s what we had for dinner the other day. You can find the original recipe here or you can watch a video (in english). 

What you need:

5 medium potatoes, boiled
4 eggs, boiled
I used peanut oil but the original recipe calls for mustard sedd oil
1tsp cumin
1tsp chilli powder
1tsp turmeric
1tsp corriander powder

3 medium tomatoes - puree
1 onion - puree
garlic and ginnger paste

What to do:
Start by heating the oil and frying the eggs for a minute until golden. Put them aside. Fry the onion puree.
Add all the spices, fry for a few minutes and add tomatoes.
Add potatoes, pour approx. a cup of water.
Simmer for a while.  
Place previously fried eggs on top. 
Serve with lots of fresh corriander.

Optionally (that’s how we had it) add 2tbsp of coconut milk. It makes the dish slightly milder in taste.
