We've been quite absent recently but we blame our exam session that is causing a total lack of time. I'm too old for studying I guess. Working and learning at this age, well, it's harder than it was when I was twenty for sure.
We're short of sleep and we're neglecting our diet. Not that we've been eating burgers and drinking beer but we definitely lack ideas for fancy and healthy dinners. But...no matter how many exams we have and how tired we were, we just had to try out this new recipe by Jamie Oliver. We often watch his 30min meals and this one made us drool. Here you can find the recipe that is closest to the original. Since it was a TV program, we'd have to buy a book to get the full recipe. It's worth it.
Our full meal consisted of chicken kebabs in satay sauce, noodles and salad on the side.
a bunch of coriander
a bit of chilly (optional)
2 garlic cloves, peeled
fresh ginger, peeled
3tbsp soy sauce
3tbsp fish sauce (optional)
3tbsn crunchy peanut butter
lime juice and zest for taste
Combine the satay ingredients in a food processor and whizz until a thick paste is formed. Add a bit of water until the sauce is spooning consistency.
Noodles with dressing blended with:
1 garlic clove
small bunch of coriander
2 tbsp olive oil
1 tsp honey
2 tbsp lime juice
- Roast some nuts on a pan. We used peanuts but cashew nut would be even better. When they are golden, add a spoon of honey, roast another minute.
- The noodle sauce is quite similar to the satay but its thickness is different. If you don't want to bother though, use the satay sauce but don't forget to thin it down a bit.
- We recommend simple lemon, olive oil and sugar dressing for the salad.
- Coat the chicken kebabs in satay sauce and put in the oven for approx. 25 mins.
