I found this recipe a while ago and just had to try it out. The girl from this blog said this bread hits all the comfort spots in her soul and that’s exactly how we feel about it. This is probably my second ever yeasty cake and I’m so happy to announce that I’VE MADE IT :) I must tell you this is also one of the best cakes I’ve tried. It’s perfect for breakfast, it’s soft, gooey in the inside and super crunchy on the outside. It may seem complicated but in fact it really isn’t. You just have to follow the instructions exactly and be a little patient. Let’s start with…
What you need for the batter
250 gr flour + 95gr and 2-3 tbs for later
7gr dry yeast (1 packet)
1/4 tbsp salt
50gr unsalted butter
80ml whole milk
2 large eggs
1 tbsp vanilla extract
…for the filling
150gr brown or white sugar
2 tbsp cinnamon
1/2 tbsp nutmeg
What to do…
In one bowl combine 250gr flour, sugar, salt and yeast, in another bowl whisk the eggs. In a saucepan melt the butter with milk, remove from the heat and add water and vanilla. Now combine all three mixtures together (flour mixture, eggs and butter). At this point the daugh will be rather sticky and you’ll probably think it’s never going to come together… but don’t you worry. Yon can now add the remaining 95gr flour. Although still sticky, try to place the daugh in a greased bowl, cover with a dry towel and set aside for 30-45 mins to rest and grow. While it grows, combine sugar with cinnamon and nutmeg. I made a silly mistake and melted it together, don’t do it, it only makes it messier.
When the daugh is doubled in size, take it out and add the remaining 2 tbs flour. Knead for a short while and then leave for 5 mins to rest.
Slightly flour your working space and now roll the daugh out into a large rectangle. Cover with cinnamon mixture. Slice into long strips. Place all of them on top of one another and slice the stack into 5 or 6 equal squares.
Place in a previously buttered bread pan on their sides. Leave it to grow for another 30-40 mins. (At this point I made a big mistake and squeezed it all in a smaller baking tin. Later on, I saw a monster trying to come out of my oven. It grew so big it literally almost opened the oven door).
In the meantime preheat the oven to 180C.
Bake for 35 mins until golden on top. Please be patient (unlike me) and leave it to cool and rest for 10-20 mins.
