We dedicate this post to our dear friend who moved to Israel with her lovely family. We hope you are doing just fine over there. We miss you here and we missed you even more yesterday morning while eating shakshouka. I learned about this dish a long time ago when our friend posted about it on fb. I then thought it must be something impossible to make and probably I won’t even get the necessary ingredients. I didn’t even bother to check what it was. The other day, I went with my friends to an israeli restaurant and ever since, I’ve been crazy about middle eastern, moroccan and indian flavours. I often have days when I can only eat one particular thing, you know? Don’t you? Anyway, we’ve been trying to eat more healthy breakfast. We can’t always eat millet, right?. We needed something different. Shakshouka seemed like a perfect idea. And it’s so simple and you need literally 3 ingredients plus the spices and herbs. So, check how simple it is to prepare. And the taste……
Optionally, you can use crushed garlic and chopped bell pepper but it takes longer to cook.
Season with salt and pepper and sprinkle with fresh parsley or corriander.
We ate it with rye bread and tomato chickpea spread.
