It may not be the healthiest kind of dinner but there are days when you say go to hell to all your diets and all you need is some comfort food. It definitely did its job.
For the béchamel
2 cups whole milk
4 tablespoons unsalted butter
2tbsp all-purpose flour
0,5tsp smoked paprika
1 packet of elbow macaroni
1,5 cup shredded cheddar or gouda cheese
0,5 cup grated Pecorino or Parmesan
0,5 cup bread crumbs blended with rosemary and garlic
What to do
- Preheat oven to 180°C. Melt butter in a large skillet, whisk in flour until smooth, cook for a second, slowly add warm milk. Cook, whisking constantly for 2 minutes until it thickens.
- Whisk in salt, pepper, paprika and shredded cheese, stir in pasta. Spoon the mixture into a lightly greased baking dish, top with remaining cheese. Put a slice of tomato and top with bread crumbs mixed with rosemary and crushed garlic. Bake for 20 minutes or until golden and bubbly.
