Carrots and broccoli

Last night we went out for a housewarming party to Kamil's cousin. It was a blast. We all needed a reset. By all I mean us and Kamil's brother with his wife and by reset I don't mean getting drunk (at least us girls) but spending a totally laid back evening after a rather tiring and stressful week. It was a long night but totally worth it as we hadn't seen most of the people there for several months.
Sunday started rather early for us today but it was also worth it as we decided to make up for the lost energy with some good food. The soup had almost been gone before Kamil went to work today (which fortunately doesn't happen too often) but the tart is waiting for him after he gets back.

So here's what we prepared today. A carrot soup and a broccoli tart, ok I admit I had a piece, I couldn't wait.

Carrot soup recipe:
4,5 carrots chopped
1 onion chopped
2,3 potatoes sliced
a tiny bit of butter
salt and pepper
curry and ginger (1tbsp)
1 stock cube
spoon of tomato puree


Fry the onion and add sliced carrots and potatoes on a saucepan. Add the spices after a few minutes and fry everything for about 10 mins.. Put everything into a bigger pan and add about 1 litre of stock. Boil everything for a while until tender. Blend it well into a velvety texture. Garnish with cream, chopped parsley or chive.







And now the main dish, the broccoli tart.
You'll need:

250gr flour
1/3 butter or margerine
2 eggs
2 tbsp salt

Mix all the ingredients together and toss to form dough, pressing together into a ball, put it to the freezer for a while. After you prepare the broccoli(below) take out the crust and roll it out onto a greased baking tin. Prick the crust with a fork. Preheat the oven to 180 degrees and bake the crust for about 10 mins.

Now the broccoli

broccoli
onion
big spoon of cream
1 egg
salt and pepper

Fry the onion and boil broccoli until soft and chop finely. Mix with onion, cream, egg and spices. Place everything on the prebaked crust.

Now you can cover everything with cheese sauce which is optional.

Mix:
1 egg
grated cheese
spoon of cream
