MoKa's bakery

Maybe it's a bit too much to call it a bakery but the smell of baking bread, which filled our flat was really amazing, like from a real bakery. This is a recipe from my dad who no longer buys bread but makes it himself at home. It's the easiest recipe ever because all you need is a bowl and a pair of hands. it's not one of those recipes where you need leaven, this substance used to produce fermentation, which takes up to 7 days to prepare and you have to take care of it all the time. As much as I would like to eat bread like this I have no time for such complicated recipes. Mine requires regular yeast only and 10 mins to mix all the ingredients. If there is a man at home to do all the hard work with pressing the dough all you actually need is to buy the products.

These are the ingredients which should be combined in one bowl.


1kg of wholemeal flour (or plain if you like)
200 gr sunflower seeds
2,5 cup oatmeal
3 spoons flax
2 spoons sesame seeds
0,5 cup bran
2 spoons sugar
1,5 spoon salt

In a separate, smaller bowl pour 1 litre of warm water and add a package of yeast (2,25 tbsp of instant yeast) Stir until dissolved.

Combine dry with wet ingredients and press for a while.



Put the dough evenly into 2 previously greased bread tins. From this recipe you'll have 2 long loaves. Sprinkle them with sunflower or sesame seeds.



Put aside for about 20 mins and cover with a cloth. It has to grow.

While it's growing, preheat the oven to 200 degrees.
When you notice your bread wants to get out and go for a walk put in into the oven for 1 hour 20mins. You can lower the heat to 180 after 45mins. That's it!



 If you keep it in a cotton or linen bag it'll last over a week. Remember to put the other loaf into a freezer.
