Lemon tart


There is this place in Krakow, called Prowincja, one of the nicest and most popular pubs in the city. Apart from the pleasant atmosphere, they serve the most delicious, mouth watering lemon tart. To be honest, no matter how hard I try, it’s bloody difficult to achieve what seems to be just a piece of cake :) Maybe they have a secret ingredient, I will never know but as for now, here is another attempt to hit perfection.



 Crust:
200gr all purpose flour
3 egg yolks
100gr cold butter
60gr sugar
2 tbs sour cream
vanilla sugar

Mix all the ingredients together and toss to form dough, pressing together into a ball as quickly as you can, put it to the freezer for a while. While you prepare the cream, take out the crust and roll it out onto a baking tin. Prick the crust with a fork. Preheat the oven to 200 degrees and bake it for about 15 mins. 

Cream:
5 egg yolks
1 cup sugar
100ml heavy cream
juice of 4 lemons
1 tbs potato flour


Mix the yolks with sugar until smooth. Add cream and potato flour, mix again, now add the juice. Pour into a saucepan and bring to the boil. When it cools down, pour onto the crust.

Meringue
5 egg whites
8 tbs powdered sugar
pinch of salt
teaspoon of potato flour

Blend everything until thick. Put on the crust and in the oven for an hour at 150C. It only needs to dry, you may leave the oven slightly open.
