Limoncello citrus trifle


I'm not the biggest fan of tiramisu. I love coffee but I don't like it in desserts. Usually tiramisu has too much booze, it's too wet and the bitterness of coffee simply takes all the sweetness away and what are all desserts about if not sugar, right? The citrus version is so much better and full of flavour. Thanks to lemons and oranges it's a perfect summer dessert. So, yet again, thanks to Jamie Oliver (who else), we indulged ourselves with another mouth watering after dinner treat. 





Here is the full recipe:

3 oranges
75ml Limoncello
100gr ladyfingers
250gr mascarpone
2tbsp icing sugar
100ml milk
1 lemon
1 cup of seasonal fruit (strawberries and raspberries but apricots, nectarines etc. will also do)
1/4 bar good quality dark chocolate

In a good sized serving dish (it will need to fit a single layer of your sponge fingers) squeeze the juice from the oranges. Stir in the Limoncello and taste to check sweetness and alcohol; adjust if necessary. Layer the sponge fingers in the serving dish – they will absorb all the juice.
Put the mascarpone and icing sugar into a separate bowl with the milk. Zest the lemon and add to the mascarpone and squeeze in the juice of half the lemon. Whisk well. Spread this mixture over the sponge fingers, top with the berries and shave chocolate over the top. Refrigerate until you are ready to eat.

Watermelon slushie aka summer life saver


We celebrated the official beginning of summer yesterday. It was gorgeous. I truly love summer but the heat and lack of air we all experienced yesterday was unbearable at times.  I also thought the first day of summer is a great reason to go on a girls night out (I may be getting old, I need a reason to go out, it's just terrible). Anyway, we had a real blast. We tried all possible summer fruit drinks and Pear Bellini and rasbperry shots stole our hearts. We had some good food at shared lots of laughs. 
Back to the slushie then. It really saved us yesterday. The morning heat made it impossible to eat  regular breakfast so we decided to freshen up with something super cold. I froze a handful of watermelon cubes the night before so it was super quick and simple to make. We experienced a bit of brain freeze but geez, it was worth it.  So here it is.

What's for breakfast - Millet groats with lots of goodies

Everybody knows breakfast is the most important meal of the day. We always try to remember that. Some time ago my brother told me about millet groats and I thought why not give it another try. I'd always thought it was rather boring and tasteless but now I really started to like it. Whenever we have a bit more time in the morning we prepare a huge bowl of millet with whatever we find in the storage, as long as it's healthy. Every time we try to add something new but usually it is nuts, cranberries, bananas, oranges, apple sauce or grated apple, flax and cinnamon. I'm telling you, a bowl of this delicious mix and you're full for the next 3 or 4 hours, no need to snack in between meals. 


There is more to it. I've been reading a lot about millet (proso or kasza jaglana) and not only does it give you an energy kick in the morning but it's also really healthy. Apart from lots of vitamins it contains huge amount of magnesium, it's gluten free, it's a great source of fiber, calcium and zinc and is cholesterol free. Millet takes out toxins from your body and is an excellent source of valuable amino acids that are not synthesised in a human body but take an active part in all vital processes. It's also alkaline and I've been mostly crazy about this recently. More on this another time.

Plum Pie


We bought these cute little baking tins a while ago and I desperately wanted to try them out. Obviously, a pie was my first thought. I found this recipe (only used half of the ingredients) and got down to work. It was really simple, in fact so simple I am worried I will bake far too many of these and that is not so good. We also got a couple of mini heatproof pots so finally, I am going to make mini mac&cheese I always wanted to try.

Classic Plum Pie


On saturday I visited my dear friend Kasia whom I hadn't seen for ages. It was particularly pleasant since Kasia is expecting her first baby, so we spent hours looking at pictures of her unborn baby boy. It's amazing, he hasn't been born yet and we were already talking about whose nose he has, cool, isn't it?
Anyway, on my way out she handed me a huge jar of plums and I already knew they'd make a great plum pie. On sunday morning our home was filled with the smell of fresh baked pie, this is one of my favourite things in the world. 

I have also been trying out our new bamboo writing pad as you can see below. I'm really loving it but I definitely have to work on my handwriting. 









Mix sugar with oil and egg until fluffy. Add all dry ingredients and mix until everything is well combined. 



I had some crumble left in my freezer but the pie tastes equally good without it. 


Serve with vanilla ice cream or plum juice or syrup.
