My beautiful Spring.

I'm so happy the cold winter days are over. I hate when it's so dark and gloomy outside as I'm generally influenced by the weather. Not like my bones hurt or I can predict the weather conditions, nothing like that. I'm like a bear who could easily sleep through winter time. My energy is almost gone and I use my happiness supplies gathered during previous summer. Yet, when spring comes...the zest for life blossoms like a flower. It's easy to get up in the morning, work seems more pleasant and rewarding and even  food tastes better. Do you feel the same?
I might even dig out my good old bike and utilise this energy this way. The bike definitely needs some freshening up but it kind of looks like the one  below. It's a new video by Kate Spade together with Adeline Adeline...a very nice bicycle shop.

Where is the sun?


Just wanted to say hi. How have you all been? Personally I'm devastated by the lack of sun in this part of Poland. I was woken up by terrible rain this morning and even drinking 3 coffees today didn't help at all, it feels awful. This is the first Easter with horrible weather like this, at least as far as I remember. Easter just doesn't work like this.

The first picture is from Friday, it was so lovely and warm and the second taken today where we spent the whole day at home, ergh!

So how are you enjoying this lovely time?

Happy Easter!

Hello our dear friends! How are you this lovely weekend? Are you enjoying the beautiful weather outside? Are you done with all the Easter preparations? I'm sure the answer's yes and you're already having a wonderful time with your families. We're spending Easter with Kamil's family this time. There's tons of food waiting for us to be devoured tomorrow. This is the best part as we all love to eat well. We're also enjoying the company of our little pumpkin Nina, Kamil's niece, she's one sweet, darling girl.



So, we thought we could share some pics of how we adorned our house with Easter decorations.











And here's what we're having all day tomorrow :)

Mazurek

I just can't stop thinking about it. I still have some work before Easter but how I wish I had a few days off so I can bake my delicious Mazurek among other things of course...like spring cleaning and stuff. Anywho, Mazurek is a kind of cake, baked traditionally in Poland for Easter, it's also relatively easy.
The crust is simple, and as soon as you take it out of the oven and it cools down, you can decorate it with whatever you like. We generally use kind of fudge filling which you can find ready made or make it yourself from scratch. All you need is a can of sweet condensed milk, boiled for 2 hours (do not open it). It will turn into this absolutely heavenly, delicious and velvety filling which you can now spread onto your prebaked pastry. Now, simply decorate it with anything you like as long as it's edible, looks nice and relates to Easter...and doesn't brake your teeth!


Here's a simple recipe for the crust:
- 2 cups (250gr) all-purpose flour
- 1 cup sugar
- 1/4 teaspoon salt
- 3/4 butter or margerine
- tablespoon of thick cream
- 2 egg yalks


Mix eggs and sugar together until smooth. Add all the remaining ingredients. Using a rolling pin flatten the dough quite thinly. Place into the baking tin. Prick the crust with a fork. Bake approx. 15 mins in 180 degrees.


I usually add lemon zest to the dough, it makes it even more irresistible.
