What's for dinner - Soba noodles with tofu


Ever since I discovered soba noodles I've beed madly in love with them. The recipes I use may be slightly too similar (all of them here) but seriously, they're so delicious and full of flavours that we could eat them almost every day. And since we've been trying to cut down on meat or rather exclude it completely, we've been experimenting with different substitutes. And...guess what, we have never ever tried tofu before. Probably because it's rather hard to get in a simple grocery shop. I liked it a lot. I'm glad to announce that meat is stupid and what's more, I don't really need it in my diet. (I feel terrible because this very second I remembered we just came back from a bbq. Well, this doesn't count, it was too hard to resist (more on this later). 

Anyway, we are currently ejnoying our time at my inlaws'. They're away for a few days and we're looking after the house. We couldn't be happier. Today the weather is simply wonderful, I even sunbathed for the first time this year. 

And back to the recipe.


While your tofu is taking a bath cook soba noodles



There will be some sauce left from the tofu marinade, pour it over your cooked noodles and leave for a sec to absorb all the flavours.

Serve with sesame seeds.

What's for dinner - Veggie yakisoba noodles


In other words...yakisoba heaven in your mouth. We first ate it at our aunt's a while ago when she hosted a japanese dinner. We absolutely love asian cuisine and this must be the essence of it. Very simple to prepare as all you need is a few vegetables and four souces which are relatively easy to get (a bottle of each will last for a couple of dinners). Like most wok dishes this one also takes just a few minutes to cook which makes it perfect for all of you that want something original for dinner but don't want to waste time in the kitchen. Seriously, it's much faster than ordering take-away.

What's for dinner - Vegetarian Stir Fry with Soba noodles


One of the many presents my parents gave us at christmas was a basket full of italian and asian spices and sauces. We are huge fans of these cuisines, asian in particular (we cooked some here and here). It's really quick, healthy, full of rich flavours and so, so tasty. I saw this recipe on tv a while ago and promissed myself to make it. It's stir fry so it literally took me about 10mins. Once you prepare all the ingredients, it's just a matter of a few minutes. We are currently trying not to eat meat (honestly, I've been trying hard not to eat it at all) and this is a perfect example of a dish where it would be completely unnecessary. 











Start with frying all the above ingredients for a few seconds. Add carrots, peppers, mushrooms and spring onions in the end. Fry approx. 3-5mins and drizzle with some marinade (below)


Cook noodles according to the instructions. Drain and drizzle generously with the marinade. Set aside so the noodles can absorb all the flavours from the marinade.
