What's for breakfast - Shakshouka


We dedicate this post to our dear friend who moved to Israel with her lovely family. We hope you are doing just fine over there. We miss you here and we missed you even more yesterday morning while eating shakshouka. I learned about this dish a long time ago when our friend posted about it on fb. I then thought it must be something impossible to make and probably I won't even get the necessary ingredients. I didn't even bother to check what it was. The other day, I went with my friends to an israeli restaurant and ever since, I've been crazy about middle eastern, moroccan and indian flavours. I often have days when I can only eat one particular thing, you know? Don't you? Anyway, we've been trying to eat more healthy breakfast. We can't always eat millet, right?. We needed something different. Shakshouka seemed like a perfect idea. And it's so simple and you need literally 3 ingredients plus the spices and herbs. So, check how simple it is to prepare. And the taste......



Optionally, you can use crushed garlic and chopped bell pepper but it takes longer to cook.





Season with salt and pepper and sprinkle with fresh parsley or corriander. 
We ate it with rye bread and tomato chickpea spread.

Watermelon slushie aka summer life saver


We celebrated the official beginning of summer yesterday. It was gorgeous. I truly love summer but the heat and lack of air we all experienced yesterday was unbearable at times.  I also thought the first day of summer is a great reason to go on a girls night out (I may be getting old, I need a reason to go out, it's just terrible). Anyway, we had a real blast. We tried all possible summer fruit drinks and Pear Bellini and rasbperry shots stole our hearts. We had some good food at shared lots of laughs. 
Back to the slushie then. It really saved us yesterday. The morning heat made it impossible to eat  regular breakfast so we decided to freshen up with something super cold. I froze a handful of watermelon cubes the night before so it was super quick and simple to make. We experienced a bit of brain freeze but geez, it was worth it.  So here it is.

Pencil vs Camera by Ben Heine

I'm becoming more and more of a photo enthusiast but unfortunately drawing has never been my strong side. I would love to be able to make even the simplest sketch not turn out like a drunken hieroglyph. When looking at works of an artist like Ben Heine I really feel like taking a pencil and starting to draw... draw anything really but I'm simply afraid It'll turn out a joke. Even to myself.

Still getting inspiration is the best way to get started so I'll keep my drafts to myself for now and when the time comes maybe I'll share something decent with the world.

Pencil vs Camera by Ben Heine

What's for dinner - Classic Mac&Cheese


It may not be the healthiest kind of dinner but there are days when you say go to hell to all your diets and all you need is some comfort food. It definitely did its job. 


 For the béchamel

2 cups whole milk
4 tablespoons unsalted butter
2tbsp all-purpose flour
0,5tsp smoked paprika
2tsp salt
pepper

To assemble
1 packet of elbow macaroni
1,5 cup shredded cheddar or gouda cheese
0,5 cup grated Pecorino or Parmesan
0,5 cup bread crumbs blended with rosemary and garlic
1 tomato

What to do
  1. Preheat oven to 180°C. Melt butter in a large skillet, whisk in flour until smooth, cook for a second, slowly add warm milk. Cook, whisking constantly for 2 minutes until it thickens.
  2. Whisk in salt, pepper, paprika and shredded cheese, stir in pasta. Spoon the mixture into a lightly greased baking dish, top with remaining cheese. Put a slice of tomato and top with bread crumbs mixed with rosemary and crushed garlic. Bake for 20 minutes or until golden and bubbly.
