We bought these cute little baking tins a while ago and I desperately wanted to try them out. Obviously, a pie was my first thought. I found this recipe (only used half of the ingredients) and got down to work. It was really simple, in fact so simple I am worried I will bake far too many of these and that is not so good. We also got a couple of mini heatproof pots so finally, I am going to make mini mac&cheese I always wanted to try.

Plum Pie

Recently
It's been awfully quiet over here, we know. It's been a while since my last post and I almost forgot how to do it. I had a bunch of posts planned but somehow I didn't find the time to finish them. It's been hard for me to get down to do anything recently. Kamil's at home now so I have to get used to the new routine. Before that I had everything in order, the moment he left for work I would dive into my usual chores and work, now everything is upside down. Don't get me wrong, I love having him around, actually nothing makes me happier than spending time with this guy, it just feels like weekend all the time. Anyway, Kamil has been swamped with MoKa Studio work and I've also had more to do recently, Ginger had a minor operation, and we've been desperate to get away, even if it's only for a couple of days. That's more or less what's been going on around here. We always try our best to stay positive no matter what but recently it's been, let's say weird. I've come to a conclusion that there are only few things in life we have influence on so why even bother and stress about the other things. I hope the rest of you have it all figured out...if that's the case...let me know how you do it, please!

Bamboo Pad
Hi there! Some of you have asked me how I add my own handwriting to our photos. A while ago I mentioned about our new Bamboo Tablet which Kamil got for us. It's been so much fun using it and I must admit I've never been more fond of any gadget or device. It's so easy and quick and really comfortable. It felt a bit strange at first as you have to get used to writing and not looking down but it quickly becomes so natural. I also get to work on my handwriting in a cool new way.
This is the tablet we have and I use it together with Photoshop CS5. I'm still looking for my perfect brush but it's so much fun exploring it and doodling all over our photos.

It's Fat Thursday Everyone
I think it's the raddest tradition we have in Poland. Today we are all gorging ourselves with doughnuts and probably most of us (including me) will not even feel bad about it. Every year, we text each other with Kamil asking "ok, so how many have you had already? I've had 3 and need to take a break, good luck with your sixth donut". This year I decided to try and make my very first batch of pączki. I must say it takes ages and it's all so messy but actually worth the effort. You probably have millions of recipes to choose from but if you were interested, I used this one.

What's for dinner - Vegetarian Stir Fry with Soba noodles
One of the many presents my parents gave us at christmas was a basket full of italian and asian spices and sauces. We are huge fans of these cuisines, asian in particular (we cooked some here and here). It's really quick, healthy, full of rich flavours and so, so tasty. I saw this recipe on tv a while ago and promissed myself to make it. It's stir fry so it literally took me about 10mins. Once you prepare all the ingredients, it's just a matter of a few minutes. We are currently trying not to eat meat (honestly, I've been trying hard not to eat it at all) and this is a perfect example of a dish where it would be completely unnecessary.
Start with frying all the above ingredients for a few seconds. Add carrots, peppers, mushrooms and spring onions in the end. Fry approx. 3-5mins and drizzle with some marinade (below)
Cook noodles according to the instructions. Drain and drizzle generously with the marinade. Set aside so the noodles can absorb all the flavours from the marinade.
