What's for dinner - Spicy Bombay Potatoes and Salmon with basil sauce


Dinner today was so damn good. It was a pure expolosion of tastes and flavours. There wasn't a single ingredient we don't love. This was total fusion but somehow everything tasted so finger lickingly good together. I had a medium salmon fillet waiting to be eaten. I recently planted my little garden on the balcony so I have lots of fresh herbs, mostly basil and corriander. The fish turned out unbelievably good and potatoes, oh! the potatoes, I think I will never have those boring, plain potatoes again. For the salmon I used this recipe. It was really easy to prepare and we used just a few ingredients. Basil sauce was, I think, the best part. Kamil said he could even have it with ice cream, it was so delicious. As for the potatoes, these were so flavourful and yummy. If you like curry-like dishes you will fall in love with these. Here is the recipe I used. If you are looking for something a little more fancy but really easy to make be sure to try this out, you will not regret. I think I'll sneak into the fridge Nigella style to grab a bite of the leftovers.  



These are all the spices you will need but instead of tablespoons use teaspoons (my mistake)










Ingredients for the potatoes (my version): 


Baby potatoes- 250gr (washed and scrubbed well)
Red onion- 1 large
Grated ginger- 1 tbsp
Grated garlic- 1/2 tbsp
Coriander powder- 1 tsp
Chilli powder- 1/2 tsp
Turmeric powder- 1/2 tsp
Cumin powder-  tsp
Tomato- 1 small
Garam masala- 1/2 tsp
Curry leaves- a little bunch (dried will do just fine)
Oil- 1 tbsp
Salt- to taste

For salmon (my version):

1 medium salmon fillet
lemon zest
thyme 
s&p
olive oil

Bake for 10mins in 180C

For the basil sauce:

A bunch of fresh basil leaves
lemon zest 1tsp
lemon juice 1tsp
100ml double cream
s&p to taste

Bring everything to a boil, blend, season. 

Voila!
