What's for breakfast - Millet groats with lots of goodies

Everybody knows breakfast is the most important meal of the day. We always try to remember that. Some time ago my brother told me about millet groats and I thought why not give it another try. I'd always thought it was rather boring and tasteless but now I really started to like it. Whenever we have a bit more time in the morning we prepare a huge bowl of millet with whatever we find in the storage, as long as it's healthy. Every time we try to add something new but usually it is nuts, cranberries, bananas, oranges, apple sauce or grated apple, flax and cinnamon. I'm telling you, a bowl of this delicious mix and you're full for the next 3 or 4 hours, no need to snack in between meals. 


There is more to it. I've been reading a lot about millet (proso or kasza jaglana) and not only does it give you an energy kick in the morning but it's also really healthy. Apart from lots of vitamins it contains huge amount of magnesium, it's gluten free, it's a great source of fiber, calcium and zinc and is cholesterol free. Millet takes out toxins from your body and is an excellent source of valuable amino acids that are not synthesised in a human body but take an active part in all vital processes. It's also alkaline and I've been mostly crazy about this recently. More on this another time.

What's for dinner - Soba noodles with tofu


Ever since I discovered soba noodles I've beed madly in love with them. The recipes I use may be slightly too similar (all of them here) but seriously, they're so delicious and full of flavours that we could eat them almost every day. And since we've been trying to cut down on meat or rather exclude it completely, we've been experimenting with different substitutes. And...guess what, we have never ever tried tofu before. Probably because it's rather hard to get in a simple grocery shop. I liked it a lot. I'm glad to announce that meat is stupid and what's more, I don't really need it in my diet. (I feel terrible because this very second I remembered we just came back from a bbq. Well, this doesn't count, it was too hard to resist (more on this later). 

Anyway, we are currently ejnoying our time at my inlaws'. They're away for a few days and we're looking after the house. We couldn't be happier. Today the weather is simply wonderful, I even sunbathed for the first time this year. 

And back to the recipe.


While your tofu is taking a bath cook soba noodles



There will be some sauce left from the tofu marinade, pour it over your cooked noodles and leave for a sec to absorb all the flavours.

Serve with sesame seeds.

Hello may! Let's go on a picnic



Yes! After a week of storms and cold, shitty weather we left the house to spend some time in actual sun. It was sooo pleasant, I insisted on preparing some food and taking a blanket. We are lucky there is a huge meadow in the city center, we didn't have to go far. We made moroccan flatbread, couscous with grilled veggies and yoghurt dip with lots of corriander. It was perfect, not too messy and really delicious. We met some friends as well, shared a few laughs and went back home with our solar batteries loaded for at least...monday.

What's for dinner - Anda Curry

In a nutshell, a polish guy leaves everything behind and buys a one way ticket to Thailand, cool ha? Not only does he go on the journey of his life, he also meets a girl and has little baby Hana, how sweet is that! I'm thrilled by all the places he goes to and the people he meets. And as you can see we also love the food he prepares in his very own kitchen in the new house on the Phuket island. Ok, it's not healthy to be jealous but who cares, we want what they have :) 

So, here's what we had for dinner the other day. You can find the original recipe here or you can watch a video (in english). 


What you need:

5 medium potatoes, boiled
4 eggs, boiled
I used peanut oil but the original recipe calls for mustard sedd oil
Spices:
1tsp cumin
1tsp chilli powder
1tsp turmeric
1tsp corriander powder

3 medium tomatoes - puree
1 onion - puree
garlic and ginnger paste

What to do:
Start by heating the oil and frying the eggs for a minute until golden. Put them aside. Fry the onion puree.
Add all the spices, fry for a few minutes and add tomatoes.
Add potatoes, pour approx. a cup of water.
Simmer for a while.  
Place previously fried eggs on top. 
Serve with lots of fresh corriander.

Optionally (that's how we had it) add 2tbsp of coconut milk. It makes the dish slightly milder in taste.
