I found another excuse to give myself a treat. I had a rather stressful week and only today I could easily sit back and relax. I really didn’t feel like leaving the flat in the middle of a storm so I had to use only the ingredients available. Hmm, so what could I do with 3 eggs, a cup of sugar and some flour?…well. I’d never tried baking my own macaroons. What’s more, these are the ones I was so fond of as a teenager. I would often stop by this cake shop on the way back from school in my hometown where I grew up.
The whole preparation took me like 15 mins plus 10 mins in the oven…and the taste…like I was 16 again :)
What you need is:
3 eggs, yolks and whites separated
70gr powdered sugar
80gr all purpose flour, sifted
poppy seed
plum marmalade
Beat the egg whites and add sugar, remember to do it very slowly, add the yolks, one by one, now the flour, also gradually, don’t beat too long. I used a pipping cone but if you’re not so worried about the visual side of your macaroons just use a spoon. Sprinke with poppy seeds before putting in the oven. Bake in 180C for 10 mins.
When they cool down take the marmalade and sandwich pair of macaroons together.
