Green breakfast

We decided to make our morning sandwiches a bit less boring this time. Besides, we are crazy in love with avocado. We could eat it everyday, with everything. We also made delicious hummus which killed my blender last night but, well, at least I have some damn tasty hummus. 
For the first version we used romaine lettuce, avocado and some blue cheese. Simple but very good. 
We gave the second tost a slight twist. Avocado, lettuce, mozzarella, tomato and hummus. I was in sandwich heaven. We don’t have a proper panini toaster so we used a pan and pressed the toast with a heavy lid.
