…we’ve been in great need of spending more time together. Not that we don’t do it everyday but somehow we’d been craving more and more of it recently. It hasn’t been anything that special or out of the ordinary. Walking, cooking together, lying on the grass and talking. It all made me realize I’m so blessed to have a husband like this and the life we have created together. I woke up this morning feeling so fulfilled, I opened my eyes and saw a smiling face. I share my life with a person who makes me feel so utterly happy, loved and natural. Over the last six years that we’ve been together, we have created a solid, incredible family of two. It’s so wonderful that all this time, we’ve been growing together and we still are. And yet, six years is nothing, there is still so much we can do. And the best part is, we get to do it all together.
This probably isn’t as deep as the text above, but I finally got my coffee machine back. It was under repair for ages. I’ve had enough of instant coffee, so I’ve been indulging myself with lots of freshly brewed one for the last few days. My hands are shaking now and I’m weirdly hyperactive but I’m having another cup anyway :)
This is what we cooked the day before yesterday…Jamie’s (of course) Cauliflower Macaroni. It may not look but it was really good.
What you need
8 slices bacon
1 large head of cauliflower
200 gr dried macaroni (or similar shaped pasta)
30gr cheddar
3 thick slices of bread
a few springs of fresh rosemary
2 cloves of garlic, peeled and finely chopped
1 cup crème fraîche
Parmesan cheese, to serve
What to do
Preheat the oven to 200C. Bake bacon until golden and crispy.
Boil pasta together with cauliflower until pasta is al dente. Leave some water from boiling.
In a blender mix bread with rosemary and bacon.
Put cooked pasta and cauliflower in a heatproof dish.
Mix with grated cheese, crème fraîche and garlic. Add a little water from boiling to receive a creamy sauce.
Cover with rosemary-bacon bread crumbs.
Sprinkle with parmesan cheese
Bake for 15 mins
