What's for dinner - Leczo


Hi guys! It's been a while. I've been suffering from a total lack of inspiration, regarding the blog and everything else...like cooking for that matter. I had absolutely no ideas for anything fancy. Everything we prepared consisted o 4 ingredients tops and was cooked in one pot. Today we made simple chicken fajitas, with home made tortilla wraps but the camera battery died so I couldn't take half a picture. 
Leczo is one of my all time favourite dishes. It's simple and absolutely delicious. This time I made a vegetarian version but originally it goes with spicy sausage. It was gone by the end of the day. 





Fry the onion with a tbsp of olive oil and spices:
1 tsp sweet paprika
0,5 tsp chilli
s&p
Fry until the onion gets really dark. Now add all the veggies, salt and pepper and slow cook for about 30mins until veggies are soft.

For the meat version, fry the onion together with sausage. 



One confession before I go. I really have no idea what all the fuss about vampires is about. I also didn't know what I was getting into when Roxy lent me the first Twilight book, but after reading 150 pages in one evening there's nothing more I could concentrate on. I've succumbed! I am completely obsessed. Last time I read a book this quick, curled up in bed until very late or super early in the morning was probably 15 years ago. Now I have this feeling again and I feel like I am in high school again. I inhale, sigh and cry while reading it. Oh dear, I'm in trouble. Rox, I hope you have the next parts!

  1. We also love leczo and had it today for dinner. But of course we had to add some little changes - mashrooms and peaches. Yummm! :)
