The aforesaid banana soufflé



Just as promissed I’m sharing the recipe for our gorgeous, light as a feather banana soufflé
Believe it or not, this was my very first attempt to make soufflé. People say it’s really difficult but don’t listen to them, if I made it…you can make it, too! 

What you need (for 4 souffles):
1 ripe banana
1 heaping tablespoon sugar 
2 egg whites
2 egg yolks
Pinch of salt
Pinch of cinnamon

What to do:
Butter and sugar 4 ramekins
Preheat oven to 190C
Puree banana until smooth.
Mix with egg yolks, sugar and cinnamon
In a separate bowl, beat egg whites and salt until thick and foamy
Fold 1/3 banana puree into egg white mixture first, then add the rest. Pour into ramekins and place ramekins on a baking sheet.
Place them in the oven and bake for 10-12 minutes, or until puffed up.

PS: Don’t forget it’s St. Patrick’s this Saturday. What a great excuse to bake some more :)
