Breakfast - Yoghurt with fresh rhubarb sauce


I absolutely love rhubarb, in every form. In cakes, cupcakes, for dinner and even for breakfast. For the 100th time I’m going on a diet and thought breakfast like this would be a perfect start. 

What you need
30gr rhubarb, cut into cubes
20gr caster sugar or more if you like it sweeter
1 tbsp cinnamon
1tbsp lemon zest
juice of 0,5 lemon or orange
1cm grated ginger  (optional)
100ml natural or greek yoghurt

What to do
Put the rhubarb into a pan, add sugar and the rest of ingredients, simmer for 5-8 mins until soft but still holds its shape. 

I think it would be even better with granola and honey.
